THE INGREDIENTS
- 1 1/2 pounds sweet potato, cut into 3/4 inch chunks (peel on or off)
- 1/2 cup coconut milk
- 1/4 tsp salt
- pinch of grated nutmeg
THE INSTRUCTIONS
Boil sweet potatoes until very soft. Drain. Add coconut milk, salt, and nutmeg and mash until smooth and combined.
THE VERDICT
These were good. VERY good. Good enough that I think I will always make sweet potatoes with coconut milk. My husband thought this recipe was great. My two year old thought it was pie.
I used pre-washed, pre-peeled, pre-cut frozen sweet potatoes from Costco. They come frozen. And they’re organic. And the packaging is both resealable AND biodegradable. It really doesn’t get any easier than that.
